I haven't gotten an official diagnosis yet — but I'm pretty confident I have Alpha-gal Syndrome. I figured it out through AI, not a doctor. I described my symptoms, the timing of reactions, what I'd eaten — and the AI connected the dots before any physician did.
That experience sent me down a rabbit hole. AGS is triggered by mammalian meat and derivatives, but the real problem is everything hidden: gelatin in marshmallows, lard in restaurant tortillas, carrageenan in "dairy-free" milk, beef extract hiding as "natural flavors." I use Claude for the AI reasoning because it handles nuance — knowing that "natural flavors" in a savory product warrants a flag, not a pass.
If AI helped me figure out what was wrong, maybe it can help others eat safely too. That's the whole idea.
