I built this because I kept checking my inbox for a reply that hadn't come, with no way to tell whether the email had even been opened.
Every email tracker I tried had a catch:
They stamp "Sent with [their brand]" on your emails. Your recipients see it, and it makes every message look like a campaign blast.
They count robots as readers. Apple's privacy proxy and corporate security scanners load tracking pixels all day, and most tools happily report those as "your email was read".
They ask for permission to read your entire inbox just to tell you an email was opened.
