"you stay in control through permissions" - is that a one-time grant per capability (e.g. "allow payments" forever) or does it actually ask again for each individual payment with the amount shown? the failure mode I'd worry about isn't the agent being malicious, it's it misreading an email and booking/paying for the wrong thing while I'm offline specifically because I'm offline.
